Lemon Bars are a great treat, they are celebrated every year on October 15 on National Lemon Bar Day! In 2019, Michael McCarthy, a British environmentalist and a newspaper journalist, found out many people did not know what a lemon bar was at a bake sale. So, he decided to create National Lemon Bar Day so people would know what a lemon bar is and what it tastes like! A lemon bar as a thin piece of shortbread with lemon curd filling. In the 12th Century Scotland created Shortbread, then in 1492 Christopher Columbus took lemon seeds from Europe to the New world. Next, in the 19th Century England created lemon curd. Finally, in 1962 “Chicago Daily Tribune” printed the first lemon bar recipe that we know and love today. People eat lemon bars as a nice treat to enjoy with friends!
